Argentine development was based a lot on late Victorian English Capital, Patagonia in particular was exploited after most of Australia with similar cattle & sheep flush of first run herds and flocks, those early stocking rates were not often met again until the green revolution on either continent. The real difference in comparable economies of Australia & Argentina happens post WW1. Britain capital shrank.

I've often said that in Australia the 'country' is an outgrowth of the city, but I feel it is true everywhere, and ignored since the Epic of Gilgamesh was retold to credulous peeps.

No doubt gauchos are older than English capital arriving but would they have been so important culturally without it?

Buenos Ares is a late development (even if it started earlier) the Spanish would more interested in enslaving agriculturalist of what became Paraguay, see also (9 years ago , feels like yesterday):
